Japanese American Cultural & Community Center (JACCC)

A rare, immersive celebration of hakko (発酵), Japanese fermentation, Hakko Expo & Market explores the traditions and techniques behind Japan’s most essential flavors; from miso and sake to soy sauce and koji. Rooted in climate, agriculture, and community, fermentation is both an ancient craft and a living practice shaped by time, care, and human touch.

Presented by JACCC in collaboration with SUZU GROUP of Niigata Prefecture, the program brings 13 fermentation-related companies out of the kitchen and into a shared space. Through hands-on workshops, communal dining, and thoughtfully curated offerings, guests are invited to experience fermentation as it exists in everyday Japanese life: approachable, meaningful, and deeply human. As part of the program, HAKKO HOUSE will join the Little Tokyo Farmers' Market on Saturday, February 21, offering fermented products and seasonal bentos for purchase.
