This atmospheric Japanese import specializes in rice cooked inside a kamado, a 500-lb. metal pot inserted into a stone fired oven. The quality of the rice is paramount to Japanese gourmets, and this may be the most delicious rice you’ve ever tasted. Special dishes such as rice ball, ankimo, a pink fish liver pate and ochazuke, rice and meats cooked in tea, are complimented by meat and fish cooked on a charcoal grill.
