Toshi Sigiura knows sushi. He founded the California Sushi Academy on South Robertson and opened his sushi house on Sawtelle in 2007 featuring a combination of traditional sushi and modern California accented plates that remain rooted in Japan, including deep-fried Japanese flounder with basil olive oil and Wagyu steak in wasabi sesame sauce.
