Executive Chef Evan Funke’s vision for Bucato is based upon his continued training in Bologna, Italy where he solidified his dedication to seasonal ingredients and the dying art of pasta "fatto a mano." His authentic approach around locally grown ingredients is the beginning of every dish featured on Bucato’s menu. Guests will enjoy a taste of Italy with traditional and seasonal sugos and ragus, wood-fired meats, and hand turned bread. The ingredients are sourced from Bucato’s dynamic partnerships with various local farmers, ranchers and traditional artisans, reinforcing an awareness and commitment to sustainability, seasonality and ethical procurement.
