Piero Selvaggio Presents a Sicilian Dinner with the Wines of Firriato

Piero Selvaggio and Executive Chef Tommaso Tarantino of VALENTINO, and Marco de Bartoli, General Manager of FIRRIATO Winery in Sicily. Valentino is as relevant today as when it opened in 1972 and continues to be a magnet for those seeking a fine dining experience with exemplary food and wine, grand hospitality and professional, detailed service.

On Thursday, February 11, 2016, VALENTINO transports their guests to Sicily with a dinner celebrating the legendary wines of FIRRIATO vintners Salvatore and Vinzia Di Gaetano. The wines will be accompanied by Chef Tommasi Tarantino’s custom designed tasting menu to complement these extraordinary wines from this southern Italian region. Served throughout the evening will be ample tastings of FIRRIATO Jasmine Zibibbo 2014; Sabbie dell'Etna Bianco DOC 2014;Sant'Agostino Nero D'Avola Syrah 2012; Harmonium Nero D'Avola, 2012; Ribeca Perricone 2011; and L'Ecru' Zibibbo Passito 2012.

More than thirty years ago Salvatore Di Gaetano decided to achieve excellence through the production of high-quality Sicilian wine during a time when it seemed inconceivable. This miniature continent offers an extreme variety of terrain – high mountains, sea level beaches and plateaus of compact clay soils, and lava sands of Etna to cultivate rich, thick, hearty vines. As a young man, Gaetano realized Sicily had the perfect elements to produce epic wine – sizzling hot sun, spiraling winds and cool evenings tempered by the fresh sea air. Salvatore and Vinzia Di Gaetano, along with their family, have made a life's work producing wines with authentic terroir. Through their passion and enthusiasm FIRRIATO was born. The wines have played a leading role and have received accolades from Antonio Galloni, Wine Spectator and Gambero Rosso.

The five course tasting menu begins with Assaggino of Classic Arancini, followed by courses of Octopus Spiedino with Fava Cream and Rosemary Sauce; Eggplant and Tomato Torte and Lamb Cappelletti with Ricotta and Tomato Foam. The main course is a duo of Veal Cheeks in Salsa Verde and Rabbit Agrodolce. The evening is completed with a dessert plate of Valentino’s Sicilian signature desserts including I Cannoli di Ricotta con il Pistacchio di Bronte.  

Guests will enjoy Sicilian music and a virtual video tour of the region in anticipation of Piero’s personal travel tour of his homeland scheduled for June 2016.

In addition to the a la carte menu, a special four-course menu ($85 per person/additional wine pairing for $45) featuring signature Baltaire selections along with new, seasonal dishes from Executive Chef Travis Strickland will be available in the main dining room, outdoor terrace, and bar and lounge during lunch and dinner service February 12, 13, and 14.
